Ingredients
The Heart of the Salad
- 1 cup cooked quinoa
- 1 cup steamed broccoli
- 1/2 cup shelled edamame
- 1 cucumber, diced
- 1 tomato, diced
- 1 cup cooked beans (I used white & chickpeas)
- 1/2 large mango, diced
- 1 avocado , diced
- Small handful blueberries
Probiotic Lemon Vinaigrette
- Juice of 1 lemon
- 1-2 tbsp maple/ honey
- 1 tbsp high quality oil
- 1 tbsp Probiotic Cranberry
Method
- Add all salad components to a large bowl.
- Mix all vinaigrette ingredients together in a separate small bowl.
- Pour vinaigrette over veggies and do one final toss!
